Cabbage is the vegetable that does it all: it fills you up, tastes great and is healthy – and it is also a sustainable food choice. In this talk, pharmacist, PhD and author Anette Sams offers a fresh look at the biology of both cabbage and the body.
Anette shows and explains why carbohydrates from cabbage have the exact opposite effect on the body compared to refined carbohydrates found in e.g. pasta, bread and sugar. By replacing processed carbohydrates with so-called "cabbage carbs", the gut microorganisms are nourished all the way through the digestive system. This helps create stable blood sugar, a balanced immune system and an active hormone system.
The talk is based on Anette's bestseller Kålhydrater – Gør kål på overvægt, insulinresistens og sukkertrang, co-written with Jane Faerber. The event is part of Grønne Greb, a Klima Living Lab activity under Aarhus Municipality's Climate Plan 2025–2030.
